This is my all-time favorite chicken recipe. I would make this even if it had thirty ingredients and took hours. Thankfully, it does not.
8-10 chicken thighs (you can use breast meat if you like)
2 cups Italian Style Bread Crumbs
1/2 cup grated Parmesan cheese
1 stick butter
Preheat oven to 350 degrees.
Remove skin from chicken thighs and discard. Combine Italian Bread Crumbs and Parmesan cheese in a medium size bowl. Melt butter in saucepan. Dip one chicken piece at a time in the melted butter and then into the bread crumb-cheese mixture. Place all chicken pieces into a 13″ x 9″ baking pan. If any crumb mixture remains, pour it over the top of the chicken pieces.
Place chicken in the oven and cover loosely with aluminum foil, leaving openings between the baking pan and foil. After 50 minutes, remove the foil but leave the chicken in the oven. Turn oven heat off and let chicken remain in the oven for another 10 minutes.
I have made this recipe countless times over the years and often serve it to company. It’s become one of my favorite comfort foods.
