The mixture of sweet and tangy makes these carrots a great side dish when served with beef or chicken.
1 pound carrots, sliced diagonally
2 tablespoons butter, softened
1/4 cup Dijon mustard
1/2 cup brown sugar
1-2 teaspoons ginger root, grated
Place sliced carrots in bottom of slow cooker. Mix remaining ingredients, spoon on top of carrots, and stir. Cover and cook on high for 2 hours.
