This is one of those fruit salads that can be made year round owing to its readily available ingredients. I love serving it with ham or pork, but it’s a winner at any meal or when you want a light dessert.
20 ounce can pineapple chunks, well drained
11 ounce can mandarin oranges, well drained
15 ounce can peach slices, well drained
2-3 bananas, sliced
1 can peach pie filling
Gently mix canned fruit and banana slices in a large bowl. Fold in pie filling. Refrigerate for several hours before serving.
Optional toppings: chopped nuts, mini-marshmallows, whipped topping
This makes a wonderful springtime salad for your whole family.
16 ounces ricotta cheese
3 ounce package orange gelatin mix
small (8 1/4 ounces) can crushed pineapple, drained
11 ounce can mandarin oranges, drained
1 cup whipped topping (such as Cool Whip)
Place ricotta in a mixing bowl and sprinkle with dry gelatin mix; stir. Add drained pineapple and oranges; mix well. Fold in whipped topping and chill in refrigerator until served.

2 cups frozen peas, defrosted
2 cups frozen corn, defrosted
1/2 onion, minced
3/4 cup cheddar cheese, grated or cubed
1/2-3/4 cup French dressing
Mix all ingredients and a large bowl; season to taste. Refrigerate for several hours before serving.

This make-ahead salad is easy to prepare and goes well with any meal.
1 head cauliflower, cut into small pieces
10 ounce package frozen peas, defrosted
2 cans water chestnuts, drained and chopped
1/3 cup onion, chopped
1/2 cup mayonnaise (more if needed)
The day before serving, mix all ingredients together. Season to taste. Cover and refrigerate.
